The surprise guest cake
As I've shown many times before, I like entertaining, pull together some drinks, appetizers, a theme, and I'm ready to go. However, I'm really not the type to great people at the door with a Betty Crocker book in hand and an apron on, but being the guest of that person sounds pretty nice. I will admit though, there are times when I know I should have more to offer than the string cheese in the fridge and almonds in the pantry, so when I came across this recipe for a quick pumpkin cake it sounded too intriguing to pass up. Two ingredients and 20 minutes later a warm spiced cake is ready to serve. It's about as close as it gets to giving in to the store-bought sweets, but infinitely better. With no prep time, snack bowls, or cocktail napkins needed I've deemed this baked good as the "Surprise Guest Cake". It's ready in a moment and cooling on the counter between the time the car pulls up and the doorbell rings...if you greet your guests then take 20 minutes to saunter into the kitchen, but it's a quick remedy nonetheless.

ReplyDeleteI just came across your blog and upon seeing you are not only a transplant to Ann Arbor (we moved here from New York City recently for my fiances residency) but that you also have an affinity for this 2-ingredient nirvana, I just fell a little bit in love. This muffin/cake/loaf (I eat it at all hours of the day) recipe tastes seriously sinful. :)
